Top-quality traditional method sparkling wine of absolute world class. Sparkling white-straw yellow colour streaked with thousands of tiny bubbles that rise to the constant creamy collar. Masterful nose with mineral notes of rock crystal and chalk up front, then freshly picked green fruit and citrus tones with a floral undertone, very striking in variety as if you were standing in the vineyard. The taste is a sensual battle between refreshment and creaminess, reminiscent of flawless sour cream; crispy acids and again that crystal crispness that turns into a creamy soft texture and in turn to a lush yet refined retro with a very long mineral aftertaste. Aperitif par excellence, with a few salty snacks, preferably raw, from our North Sea. Likewise, with the noblest fish dishes (white sea fish!) that are served raw or slightly seared. Also delicious with young vegetables, quickly blanched with an oriental dip. Sublime with fresh (goat) cheese and with wild white forest strawberries. Serving temperature: 8°C
